Hey everyone, hope that you are having a great week. I can't believe tomorrow is thrusday, time flies when your baking. lol So here is another cake I baked yesterday it is so luscious. I have attached the recipe so you can make it yourself.
Cake Recipe:
For the cake
1/3 cup cake flour
1/3 cup unsweetened cocoa powder
2 tbs cornstarch
1/2 tsp baking soda
1/2 tsp baking powder
1/3 tsp salt
4 large eggs, separated
1 cup granulated sugar
confectioner's sugar
for the filing
1 container frozen whipping topping
Here is my cake
Making the cake
1. Preheat oven at 350 f. Line a 15x10 inch flat pan with waxed paper. Grease and flour lined pan; tap out excess.
2. In a medium bowl , combine flour, cocoa powder , cornstarch, baking soda, baking powder and salt. Mix well. In a separate bowl, using an eletric mixer set on medium speed, beat eggs yols and 1/4 cup sugar until fluffy.
3. in a small bowl, using clean beaters, beat eggs white on high until foamy. Gradually add 1/2 cup sugar , beating until stiff but not dry.
4. Fold 1/3 beaten eggs white into egg yolk mixture. Alternately fold in remaining whites and flour mixture. Pour batter in pan; smotth top. Bake until a toothpick inserted in center comes out clean, about 15 minutes.
Rolling and filing the cake
1. Dust a clean cloth with remaning sugar. Turn cake out onto prepared cloth: remove waxed paper. Trim the cake edges.
2. Starting with a long side, tighly roll up the cake with cloth. Transfer cake, seamside down to a wire to cool.
3. Unroll cake: remove cloth. Spread whipped topping over cake to within 1/2 inch of edges. Re-Rolls cake ; place seam-side down on a plate. Dust with confetioners' sugar before serving. Add morsels to filing if you desire.
